On May 18th, Tugela85 invites Tabaria Café for a special edition fundraiser with workshop and dinner.
Tabaria Café, an initiative of Fatima Mahmoud, a Palestinian born in exile, driven by a desire to reconnect with her roots, celebrates Palestinian culture to embrace all its beauty and manifestations. Together with a team of volunteers from all different nationalities united in their solidarity with Palestine, they previously organised successful fundraiser pop-ups in The Hague and Rotterdam.
This time, we will dive into the delicious Palestinian food culture: time to roll Maftoul, also known as the Palestinian giant couscous. We will also make the blissful Makroota biscuits with a date filling. Maftoul is traditionally rolled by hand by women, who together after the harvest crack hard wheat into semolina and roll the large grains by hand before letting them dry in the warm Mediterranean sun. We will roll the real Maftoul and make Makroota ourselves to celebrate Palestinian culture through the movement of our hands. Guided by the wisdom of Palestinian mothers, family of Fatima.
Let’s move our hands for Palestine: we show resistance through movement!
After the workshop, we will share a dinner with maftoul prepared the traditional way and a modern variation with broad beans, fennel and mint. And we will eat Makroota together.
